Yeah, red or green peppers - I don’t notice a difference in taste, so I suppose it’s whatever is cheaper/fresher or whatever you think looks nicer. I’d probably go with a sweet yellow onion as opposed to red or white onions (use whatever you have or what’s available). You can always add other veggies depending on what you have in your fridge. Another easy thing to do is just as you’re about to finish cooking, add some frozen peas - they’ll basically thaw out in the minute or two they have in the pan and by the residual heat in the fried rice. If the rice is going to be used right away or if you’re not going to refrigerate it for more than a day, clear a little well in the fried rice (i.e. push it towards the edges of the pan so there’s a little “well” where the bottom of the pan is exposed), pour in one beaten egg, and slowly stir until it starts to scramble, and once it starts coming together start mixing it with the rice. The heat already in the rice and pan will finish cooking off the egg.

That’s the basic fried rice I’ll make in a pinch, but if you’re feeling REALLY adventurous, fry up some bacon beforehand, cut it into small pieces, make the fried rice and add the bacon after the fried rice is made. Mix it in for even bacon distribution and you have a KILLER fried rice.

Oh yeah, and make sure the rice you use has been refrigerated, or at least cooled down. If you use freshly cooked rice it just doesn’t work as well.

Ha fair enough. Seemed like some odd pairings so I didn’t know if there was a preferred combo, like wrap the peppers in salami, dunk them in the salsa, and garnish with cheese or something. Now I’m hungry.
